Refactor Neovim plugin setup for LSP and dependencies, including Mason, LSPconfig, and Telescope.

Simplify plugin setup and reconfigure keymaps: Remove unnecessary configurations from `init.lua`, move which-key configuration to `custom.plugins`, and update leap keymaps.
