Update CI config to run with Xcode 13.0 + latest iPhone 13 sim / iOS 15 and macOS 11.3

Use `applySnapshotUsingReloadData` on iOS 15+ to maintain the same data source behavior we have on iOS 14 and before.

Update snapshots with iPhone 13 running iOS 15

Use UIWindowSpy since in iOS 15+ UIWindow can only be made key in the scene (not the app).
